There's bird watching on the Israel itinerary

"The classic Israel is all the holy sites, and the archeological sites," she said. "But this is a modern country. It's not the kibbutz era anymore. Things are a lot more sophisticated. Israel has become a more consumer- and comfort-oriented society," and its tourism industry has come of age too.

That means that in addition to the holy sites, today's Israeli itineraries include luxury spas on the Dead Sea, beach resorts and diving in Eilat, a wine route west of Jerusalem, bed-and-breakfasts, and hiking, Jeep tours and bird-watching.

...Israel and birdwatching...you don't see those words in the same sentence. Hopefully that will soon change :-)
